It actually turned out better than I've ever done, first time using mascarpone. It makes it insanely creamy, all star could say when she tried it was "ohhh my goddd" lol

Forgot to post these the other day, not sure why - cooking on the grill is what I'm best at.





I put a splash of a1 sauce on the burgers before placing a slice of cheese on them so the cheese wrapped around the burgers and held the sauce in. I tried some new coal too, really like the way it worked. Its oak lump charcoal, so its like 100% wood. Gives an amazing flavor

Honestly, this to me is the most apealing. I prefer to eat err normal food XD all the others look nice, but eating them just I'd feel like I'm eating a photo, or panting that they took so much time doing. Not saying this looks bad, but it's what I would probably order :)

Pepperoni quesadillas with blood spahgetti sauce



Just simple mozzarella cheese, pepperoni heated between two soft taco shells, then dip in sauce. I typically just use spaghetti sauce, tastes amazing

I'm a catering gcse student and cooking is my passion, but I don't have any photos to prove it, but I will be learning at Rick Stein's and Jamie Oliver's soon so will have some photos then :D

Cooked steaks tonight, had some ribeyes that I got a killer deal on, $4 ea. I used a dry-rub on them with a lot of seasonings, don't remember which ones exactly ill have to look when I get back downstairs if anyones interested.

Got my coals heated up, surprisingly well too. The thermostat on the grill said it was 450f (232c) so the steaks seared really good. I cooked the steaks for ~2-3 minutes on each side then lowered the coals and moved the steaks to the top rack and closed the grill to cook to the desired done-ness.

I was off work these few days for my birthday and played around with this dish at home, something simple I wanted your opinions on.



It's a simply tempered chocolate ' flower pot' as it were filled up with a little salted caramel at the base then up near the top with chocolate mousse, then I whizzed up some chocolate cake for the crumb on the top.

The Orange is a bit harder, as its fresh squeezed orange juice, passed and split into half. The first half I thicker with a mix of sugar and pectin in a 20:1 ratio, then bought up into that shape with a modern technique we call spherification, I won't go into the detail. The other half I thickened only slightly with sugar and flavoured with a little lime juice, then injected it into the hollow "Orange" I made just before. The tree itself is just chocolate and mint leaves.

It's all very chocolatey but I'm hoping the little orange does its job to bring the dish alive and cut through all that choccy.

What do you think?

I made chicken wild rice soup!


This is all according to preference, I didn't measure my ingredients just based it on what me and dap's family like. c:

Celery
Carrots
Onion
Wildrice
Chicken
Seasonings (I used salt, pepper, garlic, basil, and onion powder)
1 or 2 bay leaves
2 cups water
6 cups of chicken broth/stock
A roux (flour, butter, milk)
A slowcooker

Add your rice to the slow cooker.
Chop celery, carrots, and onion to size wanted.
Add chicken.
Add seasonings and bay leaves.
Add chicken stock and water.
Cook on high in slow cooker until chicken is fully cooked. (Around 3 hours)
Remove chicken and shred, then return to to the slow cooker.
Begin making your roux. Melt your butter in a pan, then add an equal amount of
flour. Once roux is cooked to blonde stir in milk.
Keep on medium heat until thickened. Season roux.
Add a small amount of broth from the slow cooker to roux and stir together.
Add roux mixture to soup and stir until combined.
Continue to cook until vegetables are cooked to desired consistency. Our carrots
took awhile to soften so I ended up cooking for an additional hour.
Remove bay leaves before serving.

i made a yule log at Christmas. i marbled chocolate sponge and plain sponge cake batter (i like to call it liquid cake XD) and made a chocolate butter cream for the filling and icing, i then sprinkled icing sugar on top.

Yall seem to like rustic so i made some pizzas at home for my family yesterday:

Made the dough in the morning and the sauce is basically just some passata with a few other ingredients, cooked out and blitzed up!



You all seem to have a thing for burgers so heres me: Homemade beef 1/4 pounder, seasoned with paprika and whole grain mustard, with smoked streaky bacon and blue cheese in a pretzel flavoured brioche.



Gotta end with some dessert right? Home made apple and peach tarte tatin, rustic just the way it should be at home!

I don't cook much but this is my second time cooking lasagne for my family.
It's made with turkey mince, chopped onions, chopped plum tomatoes, a seasoning of chilli, cumin and oregano, and finally lasagne tomato sauce and mozzarella cheese. It's a little messy on the sides but I guess that's something I can work on next time I cook it haha :P
(To the side is ciabatta garlic bread and a small salad of lettuce, tomatoes and avocados).
