Star Wars is a movie series/franchise created by George Lucas, and recently bought by Disney.  In the Star Wars universe, the is something called "the force" that surrounds everything, and can be manipulated by certain people, known as Jedi and sith.  Characters would say "may the force be with you" to wish someone good luck.  So today is May 4th, and "may the fourth" sounds like "may the force", so today is star wars day because of the line "may the force/fourth be with you"
